What is the Sensory Skills Intermediate Level Certification?
This course is designed for coffee cuppers and professionals who already have experience in tasting and want to enhance their ability to identify and describe coffee’s sensory attributes in a precise and detailed way. Through this program, students will learn how to use advanced sensory evaluation tools, refine their palate, and improve their ability to differentiate and describe the flavor profiles of coffees.
What will you learn in the Intermediate Level?
- Advanced Sensory Perception: You will deepen your understanding of how your senses affect coffee perception, focusing on identifying more subtle attributes like body, acidity, sweetness, bitterness, and mouthfeel.
- Intensity Scales and Attribute Evaluation: You’ll learn how to use the SCA’s 15-point intensity scales and apply sensory cupping tools such as attribute lists and hedonic scales to evaluate coffee profiles more accurately.
- Identifying Coffee Defects: You will learn how to identify and describe common coffee defects, such as musty, earthy, or overly bitter flavors, and understand how these affect coffee quality.
- Blind Tasting and Calibration: Calibration is a key skill for ensuring consistency and accuracy in sensory evaluation. During this course, you’ll practice blind cupping and calibration exercises to improve precision in your assessments.
- Applying Professional Cupping Skills: You’ll discover how to apply these skills in professional settings, both in cupping labs and in specialty coffee shops, to offer more detailed and accurate sensory analysis to customers.
